How Do You Turn a Shell Into an Instrument? Cut the End Off

A large sea snail shell with its tip removed becomes a powerful horn audible for kilometres, and people have been making them for at least eighteen thousand years.
How the instrument is made
The shell of a large marine snail is a hollow spiral, and removing the pointed tip opens a hole into that spiral at the narrow end. Blowing across or into that hole with vibrating lips, exactly as on a brass instrument, drives the air column inside the spiral and the shell radiates the sound from its wide opening. Some traditions cut the hole at the apex and others cut a hole in the side of the spiral, and a mouthpiece of wood, metal or wax is frequently added. The spiral is a natural horn shape, which is why it works at all.
What it can and cannot do
The instrument is limited in ways that shaped how it was used:

The oldest one known
A shell found in a French cave in 1931 was catalogued as a drinking cup and left in a museum for nearly ninety years. Re-examination published in 2021 found that its tip had been deliberately removed, that a hole had been made in the side, that traces of red pigment matching the cave's paintings were on it, and that the interior showed wear consistent with a mouthpiece having been fitted. Musicians were invited to play it, and it produced three clear notes. The shell is associated with a layer dated to roughly eighteen thousand years ago, which makes it the oldest known instrument of its kind by a very long margin.
Which shells work
Not every large shell makes a usable instrument and the requirements narrow the field considerably. The shell must be thick enough not to shatter when the tip is removed and when it is handled, which rules out many species. It must be large, since a small one produces a thin unimpressive note. The internal spiral must be reasonably smooth and unobstructed, since ridges and a thickened columella inside disrupt the air column. Queen conch in the Caribbean, triton shells across the Pacific and Indian oceans and several large whelks are the species most used, and their distribution is part of why the instrument appears where it does.
How it has been used
The applications recur across unconnected cultures, which follows from what the instrument can do. It signals over distance, which is why it appears as a call to assemble, as a warning, and in warfare. It is blown in religious practice in Hinduism, in Tibetan Buddhism and in Shinto, where its sound marks a boundary in a ritual. It announced arrivals and processions in Mesoamerica and in Polynesia. It called plantation workers and, in several Caribbean islands, was used to call people to gatherings including ones the authorities would have prevented. Fishing communities across the Mediterranean and the Pacific used it as a fog signal and a market call.
