What Is a Glaze? A Thin Coating Doing Several Different Jobs

The word covers a shiny coating on a ham, a syrup brushed on a pastry, a reduced sauce clinging to vegetables and a glassy layer on a cake, and those are different techniques sharing an appearance. What unites them is a surface that reflects light and carries concentrated flavour.
The main kinds
Several distinct operations are called glazing. Reduction glazing cooks vegetables or meat in a liquid containing sugar and fat until the liquid reduces to a syrup that coats them, which is how glazed carrots are made and which is a single process producing cooking and coating together. Applied glazing brushes a prepared liquid onto a surface before, during or after cooking, which is what happens to a ham with a sugar and mustard mixture, to bread with egg wash and to pastries with apricot jam. Setting glazes use gelatine, pectin or a starch-thickened syrup to produce a layer that firms up, which is how fruit tarts are finished and how mirror glazes on modern patisserie work. Sugar glazing on doughnuts and buns is a thin icing that sets to a dry surface. Each achieves shine by a different mechanism, and the appearance is the only thing they reliably share.
What a glaze does
The functions extend well beyond appearance and several matter practically:

The timing problem
The commonest failure with an applied glaze is burning, and it follows directly from the chemistry. Sugars caramelise and participate in browning reactions at temperatures well below those used for roasting, so a sugar-containing glaze applied at the start of a long cook will be black long before the food is done. The remedy is to apply it late, typically in the final fifteen to thirty minutes for a large roast, and to apply it in layers rather than all at once, building the coating and allowing each application to set. Conversely a glaze applied too late has no time to adhere and runs off. Temperature can be lowered for the final stage. Foil can shield the surface while the interior finishes. For reduction glazing the problem is different and concerns the endpoint, since the liquid passes from thin to syrupy to caramelised to burnt over a short interval and the transition accelerates as the water content falls, which is why the last minute needs watching.
The wider use of the word
The culinary sense sits alongside several others sharing the idea of a thin glassy surface layer. Ceramic glaze is a genuine glass, applied as a suspension of minerals and fused in a kiln, which seals a porous body and supplies colour and gloss, and it is where the food usage borrowed the word. Glazing in construction means fitting glass, which is the same root by a different route. In painting, glazing means applying thin transparent layers of colour over a dried underlayer, allowing light to pass through and reflect back, which produces a depth of colour that direct mixing cannot achieve and which is a technique central to oil painting since the Renaissance. Ice glaze on frozen food is a deliberate coating of ice applied to prevent freezer burn, which is a moisture barrier exactly as a culinary glaze is. The consistent thread across all of them is a thin surface layer altering both appearance and permeability.
