How Did Anyone Make Flour Before Mills? Two Stones and an Hour a Day

Grain was ground between two stones by hand for thousands of years, and doing it was a daily task that fell almost entirely on women. The stones survive in enormous numbers.
The two forms
The earlier arrangement is a large flat or dished lower stone with a smaller stone pushed back and forth across it by hand, which grinds by crushing and dragging and requires kneeling and using the whole upper body. The later arrangement uses two circular stones, the upper one turned on a central pivot by a handle while grain is fed through a hole in its middle, which grinds continuously and can be worked sitting down. The rotary form appears in the Mediterranean world in the last few centuries before the common era and spread widely, and it is the direct ancestor of every millstone since.
What the work involved
The labour is better documented than most domestic work of the period:

- •Grinding was repeated, with coarse meal passed through again
- •Sieving between rounds separated fine flour from bran
- •The stones required periodic roughening to keep cutting
- •Stone particles wore into the flour and wore down teeth measurably

What the skeletons show
The physical cost of the work is visible in human remains and is one of the clearer examples of archaeology recovering the texture of daily life. Skeletons of women from societies using the earlier pushing form show characteristic changes to the knees, toes, lower back and shoulders consistent with long periods kneeling and pushing, and those changes are far less common in male skeletons from the same populations. Teeth from grain-eating populations show heavy wear from the stone grit in the flour, sufficient to expose the pulp and cause infection in middle age. The introduction of water-powered milling reduced both, which is visible in later remains.
What ended the daily work
Mechanisation removed the task in stages over a very long period, and each stage moved control further from the household. Animal-powered versions, turning a larger stone by donkey or by human labour in a treadmill, appear in the Roman world and made commercial bakeries possible. Water-powered mills spread widely from late antiquity and were established across Europe by the medieval period, at which point grinding became a service somebody sold. In several regions lords held the right to compel tenants to use the manorial mill and to take a share of the flour, which made hand grinding at home an offence, and confiscated hand stones were built into mill floors as a demonstration.
Why the stones matter to archaeologists
The objects are heavy, durable and made of specific rock, which makes them unusually informative. The rock type can be matched to a source outcrop, so the stones trace trade routes directly, and particular quarries supplied large regions over centuries, with material from a German source found across northern Europe. Their presence establishes that grain was being processed at a site rather than merely stored. Their form dates a context. And their disappearance from domestic contexts marks the arrival of centralised milling, which is a substantial social change, since it moved a daily household task into an operation somebody else controlled and charged for.
