Word puzzles work because each constraint narrows an enormous search space until an answer becomes findable, and the pleasure comes from that narrowing. The designs differ in how they arrange it.
Why constraints make it work
The vocabulary of a language contains too many words to search through, so a puzzle that simply asked for a word would be impossible and pointless. Every element of a word puzzle exists to narrow that space. A length requirement eliminates the great majority immediately. Known letters in particular positions narrow it further, frequently to a handful. A definition or a category narrows by meaning. Crossing entries supply letters from another direction. The solver works by applying those constraints together until few enough candidates remain to recognise one, and the satisfaction comes from the moment the space collapses to a single answer, which is why a puzzle that is too loosely constrained feels unsatisfying rather than hard.
The main forms
Different puzzles arrange the constraints differently:

How a cryptic clue is built
The cryptic form deserves explaining because its rules are strict and frequently assumed to be arbitrary. Every clue contains a definition of the answer at one end or the other, and the rest is wordplay reaching the same answer by a different route, so a solver who works out either half can confirm it against the other. The wordplay uses a defined set of devices including anagrams, hidden words, words reversed, homophones, letters removed and containers, and each device is signalled by an indicator word that tells the solver which is being used, with conventions about which words may indicate what. Surface reading is designed to mislead by suggesting an entirely different sense. The rules are strict enough that a clue can be judged fair or unfair on technical grounds.
How a crossword is built
Constructing one is harder than solving one and the constraints are severe. A symmetrical grid is filled with interlocking entries, and every letter of every entry must also work in the crossing entry, which becomes progressively harder as the grid fills, so a constructor frequently reaches a corner that cannot be completed and must unpick a great deal of work. American grids interlock almost completely, with every letter checked by a crossing entry, which makes construction extremely constrained and is why obscure short words recur. British grids check roughly half the letters, which frees the construction and puts more weight on the clue. Software now assists with grid filling using word lists ranked by quality, and clue writing remains entirely human and is where the craft is judged.
What the research says
Claims that puzzles preserve mental function are common and the evidence is more modest than advertised. Large studies find that people who do puzzles regularly perform better on cognitive tests, and that association is substantially explained by people with better function being more likely to do puzzles, alongside education and other factors. Trials of training find that practice improves performance on the trained task and transfers poorly to anything else, which is the consistent finding across cognitive training research generally. What puzzles reliably supply is engagement, a measurable difficulty that can be matched to the solver, and a definite completion, which are genuine benefits and are not the same as protecting against decline. Solving them for enjoyment requires no further justification.
