What Is an Ice House? Keeping Winter Until August

Before mechanical refrigeration, keeping ice through a summer meant harvesting it in winter, packing it in an insulated chamber and accepting that a substantial proportion would melt. The technique is ancient, it was industrialised into a substantial international trade in the nineteenth century, and the surviving structures are frequently mistaken for something else entirely.

How they worked

An ice house exploits the fact that melting requires a great deal of heat, so a large mass of ice melts slowly if heat is admitted slowly and if the meltwater is removed. The typical English design is a brick-lined chamber, frequently egg-shaped and partly or wholly underground, with thick walls, a drain at the bottom, and an entrance passage with two or more doors forming an airlock so that opening one does not admit outside air directly. It is usually sited on a north-facing slope, shaded by trees, and away from anything warm. Ice is packed in tightly with straw or sawdust between layers, and the tighter the packing the better, since a single mass melts far more slowly than loose blocks with air between them. The classic mistake in modern reconstruction is assuming the structure keeps the ice cold, when what it does is slow the arrival of heat while the ice keeps itself cold at zero degrees until the last of it has gone.

The older and wider tradition

Ice storage is far older and more geographically widespread than the English country house version suggests:

  • Mesopotamian records from around the eighteenth century BCE describe an ice house built at Mari, and comparable structures are documented across the ancient Near East
  • Persian yakhchals, conical mud-brick domes with extremely thick walls, some still standing, which stored ice made locally in shallow channels using radiative cooling to the night sky, a technique that can freeze water even when the air temperature stays above freezing
  • Chinese records of ice storage for ritual and practical use going back to the first millennium BCE
  • Roman and Greek practice of bringing snow from mountains and storing it in pits, used for chilling wine
  • Indian and Ottoman traditions with their own structures and trades
  • European adoption in the seventeenth century as an aristocratic amenity, spreading through country estates in the eighteenth and nineteenth centuries, which is why the ruins are so common in old parkland

The ice trade

The nineteenth century turned ice storage into an industry, largely through Frederic Tudor, a Boston merchant who from 1806 pursued the apparently absurd idea of shipping New England pond ice to the tropics. Early voyages lost most of the cargo and he was ruined more than once before establishing that sawdust insulation, better ice houses at the destination and, critically, creating demand by giving ice away until people could not manage without it, made the trade viable. At its height American ice was shipped to the Caribbean, to South America, to Britain and as far as Calcutta, where an ice house built for the purpose still gives its name to a street. Norwegian ice supplied much of Britain, harvested from lakes and shipped to ports including a purpose-built trade into London. Harvesting was heavy dangerous winter work using horse-drawn cutters to score the ice into blocks, and the industry employed very large numbers seasonally. Losses in transit of a third or more were normal and priced in.

What ended it and what survives

Mechanical refrigeration destroyed the trade over roughly two generations. Commercial ice-making plants from the late nineteenth century could produce ice anywhere, at any time of year, from clean water, which mattered increasingly as awareness grew that natural ice from polluted lakes and rivers carried disease, and a series of warm winters that failed to produce a harvest demonstrated the vulnerability of depending on weather. Domestic refrigerators from the 1920s and 1930s finished the business, which had already shifted from supplying ice to supplying refrigerated railway cars and cold storage. The physical remains are extensive and frequently misidentified: brick domes in parkland are routinely assumed to be follies, wells, air raid shelters or hermitages, and many survive intact underground because there was never any reason to demolish them. Several have been recorded and restored, and a considerable number are known to exist only from estate maps and have not been relocated.

An ice house does not keep ice cold; it slows the arrival of heat and drains meltwater while the ice holds itself at zero degrees until it is gone, which is why tight packing, insulation, a drain and an airlock entrance matter. Structures existed in Mesopotamia and Persia thousands of years ago, with yakhchals freezing water by radiating heat to the night sky. Frederic Tudor built an international trade shipping New England ice to the tropics from 1806, and mechanical refrigeration ended it.
