The technique produces something a jar cannot, and the reason is chemical rather than sentimental. Maillard products are numerous, volatile and unstable, so the aroma compounds created during browning begin dissipating within minutes and do not survive the heating, concentration and storage that a commercial sauce requires. A pan sauce captures them seconds after they form and delivers them immediately. It also matches the specific ingredient, since the residue from a duck breast differs from that of a pork chop and the resulting sauce differs accordingly without any adjustment being needed. It requires no thickener, since reduction and a little butter supply the body, so it carries no starch flavour. It uses no additional time, since it is made while the meat rests, which is a period the cooking already requires. And it uses a pan that would otherwise need washing anyway, with the residue dissolved rather than scrubbed off, which is a small but genuine convenience that cooks notice.

The principle that flavour concentrates where cooking has happened underlies several other techniques. Roasting pan juices are deglazed to make gravy, which is exactly the same operation at a larger scale. Braising and stewing develop flavour by browning ingredients first and then adding liquid in the same vessel, so the deglazing happens as part of the process rather than as a separate step, which is why recipes insist on browning before liquid goes in.
