What Is Poaching? The Gentlest Way to Apply Heat

Poaching cooks food in liquid held below boiling, typically between seventy and eighty degrees, and the point is the temperature rather than the liquid. Delicate proteins set and then contract violently above that range, which is why boiling ruins exactly the things poaching suits.

Why the temperature matters

Proteins denature at temperatures specific to each, unfolding and then bonding to each other to form a set structure, and if heating continues that structure contracts and expels the water it was holding. For egg white the setting begins around sixty-two degrees and for yolk around sixty-five, and a few degrees beyond that turns a tender set into a rubbery one. Fish proteins set in a similar range and the flesh flakes apart once the connective tissue between muscle blocks has dissolved, which happens at low temperature since fish connective tissue is far more fragile than that of land animals. Poaching holds the liquid in the range where setting occurs and contraction does not, which produces tenderness that no faster method can, and it also means the food cannot overshoot, since the surrounding liquid cannot exceed the temperature it is held at. The difference between poaching, simmering and boiling is entirely a matter of degrees and is visible in the surface, which should show barely any movement.

The classic applications

The technique suits foods that are ruined by aggressive heat and gains little from browning:

  • Eggs out of the shell, where the white sets around the yolk and holds it, and where fresh eggs work far better because the white is firmer and spreads less
  • Fish, particularly whole fish and delicate fillets, frequently in a court bouillon, meaning a light aromatic liquid made for the purpose
  • Chicken breast, which is lean and dries out quickly by any other method and which remains tender when poached
  • Fruit in syrup or wine, where the fruit softens without collapsing and absorbs flavour from the liquid
  • Sausages and delicate charcuterie before finishing, which sets the interior without splitting the casing
  • Dumplings and quenelles, which would disintegrate in agitated water

The egg problem

Poaching an egg out of its shell is the technique's most discussed application and the advice surrounding it is largely folklore. The genuine variables are few. Freshness matters most, since the thick white surrounding the yolk weakens with age and an older egg produces wispy strands rather than a compact shape. Water movement should be minimal, since agitation breaks the white apart, which is why a gentle current from stirring is helpful only for gathering the white at the start and is otherwise harmful. Adding vinegar helps the white set marginally faster and imparts flavour, so a small quantity is a reasonable trade. Salt makes the white spread more rather than less and is generally unhelpful. Straining the egg through a sieve first removes the thin watery outer white, which is what produces the wisps, and is the single most effective intervention. Whirlpools, plastic wrap and dedicated moulds all work and address the symptom rather than the cause.

The liquid is not wasted

What the food is poached in matters less for the cooking than for what happens afterwards, since the liquid absorbs flavour from the food and can be reduced into a sauce. Court bouillon, a light aromatic liquid of water, wine or vinegar, vegetables and herbs, is made specifically for poaching fish and is discarded or reused briefly, since a strong stock would overwhelm delicate flesh. Chicken poached in stock enriches it, and the resulting liquid is better than what went in. Fruit poached in a spiced syrup leaves a syrup worth keeping and reducing. Shallow poaching in classical practice is designed entirely around this, cooking in a small quantity of liquid under a cover so that nothing is lost and the liquid becomes the sauce with minimal further work. The general point is that cooking in water discards flavour down a sink unless the water is treated as an ingredient, which is the same argument that applies to vegetable cooking water and to the residue in a roasting pan.

The related methods

Several techniques occupy the same low-temperature territory with different arrangements. Simmering runs slightly hotter with visible small bubbles and suits tougher items needing longer. Shallow poaching cooks in a small amount of liquid in a covered pan, with the liquid subsequently reduced into a sauce, which is a classical restaurant approach that wastes nothing. Butter poaching submerges food in warm butter rather than water, which is a modern technique giving a richer result at a cost. Sous vide is the logical conclusion, sealing the food and holding a precisely controlled temperature so the food reaches exactly the target and cannot exceed it, which removes timing from the equation entirely and produces results that manual poaching approaches but cannot guarantee. Oil poaching at low temperature works similarly to confit. The common thread across all of them is controlling temperature rather than time, which is the general direction modern technique has moved in.
