Why Is There a Dusty Film on Grapes? The Plant Put It There

The pale haze on grapes, plums and blueberries is a waxy coating the fruit produces itself. Rubbing it off is a habit that shortens how long the fruit keeps.

What the coating is

The film is a layer of wax secreted by the fruit's own surface cells, built from long-chain molecules that crystallise into microscopic tubes, plates and rods standing up from the skin. Those structures scatter light, which is what makes the layer look pale and dusty against a dark fruit, and they make the surface extremely water repellent, so droplets bead up and roll off carrying dust with them. The same coating occurs on leaves and stems of many plants, and on cabbage, kale and brassica leaves it is thick enough to make water run off in visible beads.

What it does for the plant

The layer performs several jobs at once:

  • Reducing water loss through the skin, which is its main function
  • Shedding rain, which keeps the surface dry
  • Making it hard for fungal spores to settle and germinate
  • Reflecting some ultraviolet light away from the tissue beneath
  • Deterring some insects, which struggle to grip the waxy surface
  • Keeping the surface clean as water rolls off

Why it matters in the kitchen

The practical consequences follow directly from what the layer does. Fruit with the coating intact loses water more slowly and resists mould better, so it keeps longer, which is why handling grapes and plums gently and washing them only immediately before eating extends their life noticeably. The coating is also the traditional source of the wild yeasts used in spontaneous wine fermentation, though modern research finds that the yeasts doing most of the work in a winery come from the equipment and the building rather than from the fruit. Some commercial fruit is polished to look shiny, which removes the natural layer and is sometimes replaced with an applied one.

Why some fruit has more

The thickness of the coating varies with species and with growing conditions in ways that are visible in a shop. Plants in dry, bright or windy places produce more of it, since the main function is retaining water, and the same variety grown in a glasshouse carries noticeably less than one grown outdoors. It builds up as the fruit matures, so an unripe fruit has less. Rain and rubbing remove it, and handling during picking, sorting and packing removes a good deal, which is why fruit at the bottom of a box is frequently duller than fruit at the top. Breeders have selected for a heavy coating in some varieties specifically because it looks attractive.

The things it is confused with

Several other pale films on food are quite different and worth separating. The grey-white surface on chocolate is fat or sugar that has migrated to the surface after temperature swings, which is a defect of storage rather than anything the food produced. White marks on the outside of a dry-cured sausage are usually a deliberately cultivated mould that protects the meat. A haze on jarred preserves is generally crystallisation. And a powdery coating on a fresh cheese is a bacterial or fungal culture applied in the dairy. None of those is the same as a coating the plant secreted while the fruit was growing.
