What Is Braising? Long Slow Heat Turning Tough Meat Into Something Better

Cooking a tough cut slowly in a small amount of liquid produces meat that falls apart and a sauce made from what came out of it. The transformation is chemical and specific, and it only works on cuts that would be inedible cooked any other way.

What the heat does

Tough cuts are tough because they come from hard-working muscles containing a great deal of connective tissue, which is built largely from collagen. Collagen is a tough fibrous protein that contracts and squeezes when heated, which is why a quick-cooked piece of such meat becomes tighter and drier. Held above roughly seventy degrees for long enough, in the presence of moisture, collagen breaks down and converts into gelatin, which is soft, dissolves into the surrounding liquid and gives it body. That conversion is slow, taking hours rather than minutes, and it is the entire point of the method. Meanwhile the muscle fibres themselves do dry out, losing moisture as their proteins contract, so the finished meat is technically drier than when it started and is perceived as moist because the gelatin coats it and the sauce carries it.

The steps and why each is there

The standard sequence is not arbitrary and each stage does something specific:

  • Browning the meat first, which develops flavour through reactions between proteins and sugars that cannot happen in liquid
  • Cooking aromatics in the same pan, which picks up the browned residue and builds the base of the sauce
  • Adding liquid only part way up the meat, which distinguishes braising from stewing and leaves the exposed surface to brown further
  • Covering, which traps steam and keeps the exposed part from drying
  • Holding at a low temperature, since a vigorous boil toughens muscle fibre without speeding the collagen conversion much
  • Resting or cooling in the liquid, which lets the meat reabsorb some of it and makes the dish better the next day

Choosing the cut

The method rewards exactly the cuts that other methods ruin, which is why it has historically been the cooking of people who could not afford the good pieces. Shoulder, shin, cheek, neck, tail and belly are all heavily worked and rich in connective tissue, and all become excellent this way while being unpleasant grilled. Lean tender cuts from muscles that do little work contain little collagen, so there is nothing to convert, and long cooking simply dries them out, which is why a fillet braised for three hours is a waste of an expensive piece of meat. That inversion of value, where the cheap cuts are the ones this method makes remarkable, has been rediscovered by restaurants repeatedly and has driven up the price of several cuts that were inexpensive precisely because nobody wanted them.

Getting the temperature right

The single most common mistake is cooking too hot, and the reasoning against it is precise. Collagen conversion depends mainly on time above a threshold rather than on how far above it the temperature goes, so raising the heat speeds the process far less than expected. Muscle fibres, meanwhile, contract and expel moisture progressively as temperature rises, and they do so much more aggressively at higher temperatures, so a vigorous simmer produces stringy dry meat sitting in liquid. The target is liquid that barely moves, with an occasional bubble, which corresponds to an oven around a hundred and forty degrees or a hob setting lower than most people use. Time replaces heat, and a piece that seems tough after two hours frequently needs another hour rather than a higher setting, which is the counterintuitive instruction that experienced cooks give and beginners disbelieve.

The variations

Nearly every cuisine has developed the technique and the differences are mostly in the liquid and the aromatics. European versions use wine, stock and vegetables, with regional variants distinguished by which. Chinese red braising uses soy sauce, sugar, wine and spices, producing a dark glossy result with a very different flavour profile from the same chemistry. South Asian preparations build a spiced base and cook the meat within it, using the technique while calling it something else. North African versions cook in a conical vessel that returns condensed steam to the pot, which permits very little added liquid. Vegetables are braised on the same principle, though the mechanism differs, since plant tissue softens by the breakdown of pectin between cell walls rather than by collagen conversion. The unifying element is low heat, enclosed cooking and enough time.

The takeaway
