What Is a Brine? Salt Water That Changes Meat From the Inside

Soaking meat in salt water before cooking makes it noticeably juicier, and the reason is not that water is being added. The salt changes the proteins so that they hold onto the moisture they already contain, which is a different mechanism with different consequences.

What the salt does

The effect has two components and both depend on salt rather than water. Salt dissolves some of the proteins in muscle tissue, particularly the ones responsible for contraction, which disrupts the structure that would otherwise tighten and squeeze out liquid during cooking. Meat loses moisture when heat causes those proteins to contract and expel water, and partially dissolving them reduces how much that happens, so a brined piece finishes cooking with more of its original liquid still inside. The second component is that salt draws water into the tissue by osmosis and by increasing the water-holding capacity of the remaining protein structure, so there is a genuine gain in mass, typically modest. Seasoning is the third benefit and the most obvious, since salt penetrates gradually into the interior rather than sitting on the surface, which produces meat that tastes seasoned throughout.

Wet and dry

The two approaches achieve overlapping results by slightly different routes:

  • Wet brining submerges the meat in salt water, typically five to eight percent salt, and adds moisture as well as seasoning
  • Dry brining salts the surface and leaves the meat uncovered, so the salt draws moisture out, dissolves in it and is reabsorbed as a concentrated solution
  • Wet brining requires a container and refrigeration space and produces a wet surface that browns poorly without drying
  • Dry brining leaves the surface dry, which browns far better, and is the reason it has become the preferred method for roasting
  • Wet brining can dilute flavour if taken too far, since the added water is water
  • Both need time, generally hours for a small cut and a day or more for a large one, since salt moves slowly through muscle

Getting it wrong

The failure modes are specific and worth knowing. Over-brining is the common one, since leaving meat in a strong solution too long produces a texture described as spongy or ham-like as the protein structure breaks down further than intended, and the result is unpleasantly salty at the surface. Brining meat that has already been treated is a frequent mistake, since a great deal of supermarket poultry and pork is sold pre-injected with a salt solution, and brining it again doubles the treatment. Sugar in a brine contributes flavour and browning and does not contribute to moisture retention, so its role is separate. Aromatics added to a wet brine penetrate very little, since the molecules are far larger than salt ions, which means an elaborately spiced brine mostly flavours the surface and the expense is largely wasted. And rinsing afterwards is generally unnecessary with a correctly proportioned brine and actively harmful to browning.

What else it works on

The technique is most associated with poultry and pork and extends further than that in both directions. Lean cuts benefit most, since they have the least fat to compensate for moisture loss, which is why chicken breast and pork loin are the standard cases and why a well-marbled steak gains relatively little. Fish takes a brine very quickly, in minutes rather than hours, because the flesh is less dense and the muscle fibres are shorter, and over-brining fish is easy. Vegetables are brined for a different purpose, since salting draws water out of cucumbers, aubergines and cabbage, which firms the texture and, in fermentation, creates conditions where the desirable bacteria outcompete spoilage organisms. Eggs, cheese and olives all pass through salt solutions for reasons closer to preservation than to seasoning. The common thread is that salt moves water across membranes, and whether that is an improvement depends entirely on which direction the cook wants it to go.

The older purpose

Brining as a cooking technique is recent, and brining as preservation is ancient and worked on a completely different principle. Salt at high concentration removes water from microbial cells by osmosis and lowers the water activity of the food below the level at which most spoilage organisms can grow, which is why heavily salted meat and fish keep for months without refrigeration. That required far more salt than any modern culinary brine, enough to make the food inedible until soaked, and salt-cured products were a staple of long voyages, winters and armies for most of recorded history. The demand made salt a strategically important commodity, taxed, monopolised and fought over, and the production sites and trade routes shaped settlement patterns across several continents. The modern short brine borrows the ingredient and almost none of the purpose, and the two uses are easily confused because they share a name.
