How Do You Make a Cloudy Stock Perfectly Clear? Float a Raft on It

Clarifying a stock until it is transparent is done by adding egg white and letting it trap everything that was making the liquid murky, which is a filter built inside the pot.
What makes stock cloudy
A stock is water carrying dissolved gelatine and flavour along with a suspension of things that are not dissolved, including tiny particles of protein that coagulated during cooking, fat droplets and fragments of vegetable and bone. Those particles scatter light, which is what makes the liquid opaque. Boiling hard makes it worse by breaking particles into smaller pieces and emulsifying fat into the liquid. Straining through cloth removes the large pieces and cannot touch the fine suspension, which is the part that actually causes the cloudiness.
How the clarification works
Egg white does the job by coagulating slowly through the whole volume:
- •Beaten egg white, usually with minced meat and vegetables, is stirred in cold
- •The mixture is heated very slowly with no stirring after it warms
- •Egg proteins uncoil and begin to link into a loose mesh
- •That mesh rises slowly, catching suspended particles on the way
- •It forms a solid crust floating on the surface
- •Liquid is ladled out through a hole in that crust
Why it must be done slowly
Temperature control is the whole skill and the reason is chemical. Egg proteins must set gradually so the network forms loosely and travels upward through the liquid gathering particles. Heating too fast sets them into dense lumps immediately, which trap nothing and sink or break apart, and the stock stays cloudy with the added insult of egg fragments in it. Boiling at any point tears the crust and pushes everything back into suspension, which cannot be undone. The classical instruction is to bring it to a bare tremble and leave it entirely alone.
Why it has to gel first
A point that catches people out is that the stock must already be rich in gelatine before clarifying, and the reason is structural. The rising protein mesh removes suspended particles and it also removes a certain amount of body, so a thin stock clarified this way ends up tasting and feeling like flavoured water. The classical sequence therefore builds a strongly gelatinous stock first, from joints and feet simmered for many hours, and clarifies only at the end. A finished example should set to a soft jelly when cold, which is the usual test that the base was strong enough to survive the treatment.
What else the raft does
The floating crust is not only a filter and the additions in it are chosen with that in mind. Lean minced meat, egg white, chopped vegetables and sometimes tomato are added, and as the crust forms and sits in gently moving hot liquid, it releases flavour downwards into the stock, so the process seasons as it clarifies. A stock clarified with egg white alone tastes thinner afterwards, since some flavour compounds are carried off with the removed particles. Modern kitchens sometimes freeze a stock and let it thaw through a cloth instead, which clarifies without heat and takes a day.
