What Is Hydration? The Ratio That Decides What a Dough Does

The weight of water relative to the weight of flour determines how a dough handles, how it rises and what the finished crumb looks like. Bakers state it as a percentage, and it explains more about bread than any other single number.

How the number works

Baker's percentages express every ingredient as a proportion of the flour weight, so flour is always a hundred percent and a dough with seven hundred grams of water to a kilogram of flour is at seventy percent hydration. The convention is used because it makes recipes scalable and comparable regardless of batch size, and because the flour is what everything else acts on. Typical ranges run from around sixty percent for a firm dough that holds its shape through around seventy-five for a standard artisan loaf to ninety percent and beyond for very wet doughs. Those differences are not marginal, since a dough at sixty percent is a firm workable mass and one at eighty-five is closer to a thick batter that cannot be kneaded conventionally at all.

What more water does

Raising the proportion changes several things at once:

  • An open irregular crumb with large holes, since a slack dough allows gas bubbles to expand and merge
  • A more extensible and less elastic dough, which spreads rather than holding a shape
  • Better flavour development, since enzymes and fermentation work faster in a wetter environment
  • A crisper crust, since more water means more steam during baking
  • Longer keeping, since the finished loaf retains more moisture
  • Considerably more difficult handling, which is the price and is why high hydration is associated with experienced bakers

What the flour can take

The same percentage means different things with different flour, which is the qualification that makes published numbers unreliable across contexts. Protein content matters most, since gluten-forming proteins absorb roughly twice their own weight in water, so a strong bread flour handles a higher percentage than a weak one and produces a workable dough where the weaker flour gives a puddle. Whole grain flours absorb far more, since bran and germ take up water, which means a wholemeal recipe at the same stated hydration is drier in practice. Milling and grain variety change absorption. Ambient humidity changes how much water the flour already holds. The practical consequence is that a recipe transferred between flours needs adjusting, and experienced bakers work by the feel of the dough rather than by the number.

The other numbers

Hydration is one of several proportions that define a dough and the others matter alongside it. Salt is typically around two percent of flour weight, and it both flavours and controls fermentation by slowing the yeast, so a dough made without it ferments too fast and tastes flat. Yeast varies enormously with the intended timing, from well under one percent for a long cold rise to several percent for a quick one, and the relationship between quantity and time is the main lever a baker has over the schedule. Fat, sugar, eggs and milk all soften the crumb and slow gluten development, which is why enriched doughs handle differently. Preferments, where a portion of the flour and water is fermented in advance, are described by what proportion of the total they carry. Stating all of these as percentages of flour is what makes recipes comparable.

Handling a wet dough

Working with high hydration requires different techniques and the adaptations are specific. Kneading is replaced by stretching and folding at intervals during the first rise, which develops the gluten without needing to lift a sticky mass repeatedly. Wet hands rather than floured ones prevent sticking without adding flour and lowering the hydration. A bench scraper does most of the moving. Shaping relies on building surface tension by dragging the dough across the surface rather than on forming it by hand. Baskets support the shaped loaf during the final rise, since it would otherwise spread. And a container with steam, whether an oven with added water or a covered pot, keeps the surface soft during the first minutes so it can expand before setting. Each of these exists because the dough cannot be treated like a firm one.
