Why Is the Fifth Note Special? Numbering the Steps of a Scale

Numbering the notes of a scale from one upwards gives each a name, a characteristic feeling and a set of expectations about where it goes next. Those expectations are what most listeners hear without being able to name.
What the numbering does
A scale degree is the position of a note within a scale, counted from the note the scale is built on, and the point of counting is that the relationship rather than the absolute pitch is what a listener perceives. The same melody transposed to another key sounds like the same melody because the pattern of degrees is unchanged, even though every actual pitch has moved. Each degree acquires a character from its relationship to the first, and traditional theory gives them names describing their function, including the tonic for the first, the dominant for the fifth, the subdominant for the fourth and the leading note for the seventh, which is named for what it does rather than where it sits.
What each degree tends to do
The characteristic tendencies are strong enough to be heard as expectations:

Where the tendencies come from

The leading note's pull is largely a matter of proximity and of learned convention, since it sits a semitone below the tonic and is used that way constantly in the repertoire listeners grow up with. Experimental work asking listeners to rate how well a note fits a key produces consistent profiles matching the theoretical hierarchy, and those profiles differ between listeners raised in different musical traditions, which supports the learned component substantially.
Naming them by syllable
A parallel system assigns a syllable rather than a number to each degree, and its history explains a persistent confusion. The syllables derive from the opening words of successive lines of a medieval hymn, each of which began a step higher, and were adopted as a teaching device by Guido of Arezzo in the eleventh century. Two traditions then diverged. In one, the syllables are attached to fixed pitches, so that the first always names the same note regardless of key, which is how they are used across much of southern Europe and is effectively a set of note names. In the other, they are attached to scale degrees and move with the key, which makes them a singing tool for hearing function rather than pitch. Arguments between teachers committed to each system are longstanding and largely unproductive.
Why musicians think in numbers
Working in degrees rather than in note names has enormous practical advantages. A chord progression written as numbers transposes to any key instantly, which is why session musicians in some traditions work from number charts and can change key on request without rewriting anything. Analysis in degrees reveals that pieces in different keys share the same structure, which note names obscure. Improvisers think in terms of which degree they are on relative to the current chord, since that determines what will sound consonant. Singers trained with a system assigning a syllable to each degree can sight-read melodies in any key by feel. And the same framework extends to modes and to non-Western scales, where numbering the degrees allows comparison that would be impossible using the note names of one tradition.
