What a scoring system decides
A scoring system determines several things simultaneously, and designers trade between them. It sets how long a contest lasts and how predictable that length is, which matters enormously for scheduling and broadcasting. It determines how much any individual moment matters, since a system where every point counts equally spreads importance evenly while a nested system concentrates it at particular points. It sets how reliably the better competitor wins, since longer contests with more independent trials favour the stronger side. And it determines whether a contest can be effectively over while play continues, which affects whether spectators stay and whether competitors keep trying.
The main approaches
A handful of structures cover most sports:

Why nesting changes everything
The tennis structure repays examination because it is the clearest case of nesting doing real work. Because points build games and games build sets, most points do not matter much while a few matter enormously, which concentrates tension at identifiable moments and produces the drama the sport is known for. It also means a player can win more total points than their opponent and lose the match, which happens regularly and is not an anomaly but a direct consequence of the design. The structure reduces the advantage of a stronger player compared with simply playing a long sequence of points, since winning a set requires winning at the right moments rather than merely more often, which keeps matches competitive and makes upsets more frequent.
Scoring that judges rather than counts
Sports scored by officials rather than by counting present their own problems and the solutions are revealing. Removing the highest and lowest judge scores before averaging limits the damage a single biased or mistaken official can do, which is standard in gymnastics and diving. Publishing individual scores rather than only the total exposes outliers. Separating the score into components with defined criteria, such as difficulty and execution, makes the judgement more auditable and reduces the room for a general impression. Anonymising judges was tried in figure skating after a scandal at the 2002 Olympics and later reversed, since anonymity removed accountability as well as pressure. Statistical monitoring of judging patterns across events identifies national bias, which studies have documented repeatedly and which governing bodies act on unevenly.
When systems get changed
Scoring changes are made deliberately and their effects are measurable. Football moved from two points for a win to three in most leagues from the 1980s and 1990s, intended to reward attacking play, and studies of the effect found modest changes in behaviour rather than the transformation hoped for. Volleyball switched to scoring every rally rather than only on serve, which made match duration far more predictable and was driven by broadcasting requirements. Tiebreaks were introduced in tennis to bound the length of sets after matches ran to absurd lengths. Rugby has adjusted the value of a try upwards repeatedly to encourage scoring over kicking. In each case the governing body was adjusting incentives deliberately, and in several the unintended consequences were larger than the intended ones.
