Why Does Smoke Preserve Food? Chemistry From a Slow Fire

Hanging food in smoke keeps it edible for months, and the effect comes from several things happening at once rather than from any single one. Understanding which is which explains why hot and cold smoking are different operations.
What the smoke is doing
Smoke from smouldering wood carries hundreds of compounds produced as the wood's components break down at temperatures below full combustion, and several of them act on food in useful ways. Phenolic compounds are antimicrobial and antioxidant, slowing both spoilage organisms and the oxidation that turns fat rancid. Organic acids lower the surface pH, which further discourages bacteria. Carbonyl compounds react with proteins at the surface to produce colour and contribute flavour. Formaldehyde and related compounds are present and contribute preservation. Alongside all of that the process dries the surface, which is a substantial part of the effect and has nothing to do with smoke chemistry as such, and the combination of a dried, acidified, antimicrobial surface layer is what keeps the interior from spoiling.
The two operations
Hot and cold smoking share equipment and do quite different things:
- •Cold smoking runs below about thirty degrees, flavours and preserves and does not cook the food
- •Cold smoking therefore requires the food to be safe by other means first, normally salting or curing
- •Hot smoking runs hot enough to cook, typically above sixty degrees, and produces a ready-to-eat product
- •Hot smoked food keeps less well than cold smoked, since the interior is not dried or salted through
- •Warm smoking occupies the range between and is used for some sausages
- •The choice of wood affects flavour substantially and preservation very little
Why it is never the smoke alone
Smoking has rarely been used by itself and understanding why matters for anyone attempting it. The antimicrobial compounds penetrate only a few millimetres, so the interior of a thick piece is unaffected and will spoil regardless of how long it hangs in smoke. The traditional sequence therefore salts or brines first, which draws moisture out of the whole piece and makes the interior inhospitable, and then smokes, which protects the surface and adds flavour, and then dries further in many cases. Fermentation is added in some traditions. Each step addresses a different part of the problem, and the historical products that kept for months, including various hams, hard sausages and dried fish, all involve several of them rather than smoke alone.
The building itself
The structure that gives the practice its name is worth describing because its form follows from the requirements. A traditional smokehouse is a tall narrow building with a fire at or below the base, racks or hooks high up, and a controllable opening at the top, so that smoke rises slowly through the hanging food and the draught can be adjusted to set both temperature and density. Height matters because it separates the food from the heat, which is what makes cold smoking possible in the same structure as hot. Many older examples are built of stone or brick against a wall, and in some regions the chimney of a house served the purpose directly, with a chamber built into the flue. Modern commercial units generate smoke in a separate unit and pipe it in cooled, which decouples temperature from smoke density entirely.
The health question
The same compounds that preserve food include some that are undesirable, which is a genuine tension rather than a scare. Polycyclic aromatic hydrocarbons form when fat drips onto a heat source or when wood burns too hot, and several are established carcinogens, with levels in heavily smoked traditional products being substantially higher than in food smoked at controlled temperatures. Nitrosamines can form where curing salts and smoke chemistry interact. Regulatory limits exist in many jurisdictions and are met by controlling the smouldering temperature, keeping fat off the heat, generating smoke externally and filtering it, which are the changes commercial production has made. Epidemiological studies associate high consumption of heavily smoked and salted foods with elevated rates of certain cancers in populations where they form a large part of the diet.
