Do Ingredients Go Together for a Reason? A Theory and What It Misses

What the hypothesis says
The proposal is that two ingredients combine well when they share a substantial number of volatile aroma compounds, on the reasoning that overlapping aromas reinforce rather than compete and produce a coherent impression. It was popularised in the 2000s alongside modernist cooking and produced a number of celebrated and unlikely combinations, including white chocolate with caviar, on the basis of shared compounds. The idea is appealing because it is precise, testable and generative, since databases of the compounds present in foods exist and can be searched for overlaps, which turns a matter of taste into something that can be computed and produces suggestions nobody would reach by tradition.

Testing has produced a mixed and instructive result:

What else determines a pairing
Aroma overlap is one factor among many and the others are frequently more important. Contrast matters as much as similarity, with fat balanced by acid, sweetness by bitterness, and richness by something sharp, which is the principle behind a great many traditional combinations and which the overlap hypothesis does not capture. Texture contributes independently of flavour. Temperature changes both. Cultural familiarity determines whether a combination reads as coherent or as strange, which is learned and differs between people. Function matters, since one ingredient may exist to carry another or to cut through it. And the specific compounds matter more than the count, since sharing a few important ones may matter more than sharing many insignificant ones.
What the tongue and nose each contribute
Most of what is called taste is smell, which is why the question concerns aroma compounds at all. The tongue detects a small number of qualities, conventionally sweet, salt, sour, bitter and savoury, plus sensations of temperature, texture and irritation that are not taste in the strict sense. Everything else comes from volatile compounds reaching receptors in the nose, mostly from the back of the mouth while chewing rather than through the nostrils, which is why food is flat during a heavy cold and why holding the nose while eating removes almost all character. A combination therefore has to work on both systems, with the tongue handling balance between sweetness, acidity, salt and bitterness while the aroma system handles identity.
How cooks actually decide
Traditional practice arrived at reliable combinations without any theory and the mechanisms are worth respecting. Ingredients available in the same place at the same season were combined repeatedly, which is why regional cuisines are coherent and why combinations from one region work together. Preparations developed together, so a sauce and the thing it accompanies were refined against each other over generations. Failures were discarded, which is a slow but effective search. The results encode a great deal of knowledge that nobody articulated. A computational approach is therefore useful for suggesting combinations outside that inherited search rather than for explaining the ones already found, which is a more modest and more defensible claim than the original one.
