Why Does Coffee Taste Bitter?

Coffee tastes bitter partly because roasted beans genuinely contain bitter compounds, and partly because of how the coffee was brewed. The second part is the useful one, because bitterness from over extraction is a fixable problem rather than a property of coffee itself.

At a chemical level

Caffeine is bitter, but it accounts for only a small share of the bitterness in a cup, perhaps around a tenth. Decaffeinated coffee is still noticeably bitter, which makes the point clearly.

Most bitterness comes from compounds created during roasting. Chlorogenic acids in the green bean break down under heat into chlorogenic acid lactones and then into phenylindanes, and the latter are strongly and harshly bitter. Darker roasts contain more of them.

Extraction is the bigger factor

Brewing is a process of dissolving compounds out of ground coffee, and they do not all dissolve at the same rate. Acids and fruity aromatics come out first, then sugars and balanced flavours, then bitter and astringent compounds last.

This gives a clear rule. Stop too early and the coffee tastes sour, thin and sharp because you have only the fast compounds. Go too long and you pull out the harsh ones as well. Good coffee lives in the middle.

What to change when it is too bitter

If a cup is unpleasantly bitter, several adjustments reduce extraction:

  • Grind coarser, so water passes through more quickly
  • Brew for less time
  • Use slightly cooler water, around 90 to 94 degrees Celsius
  • Use less coffee relative to water
  • Try a lighter roast

Why grind size matters so much

Grind size controls surface area, and surface area controls how fast extraction happens. Finer grounds expose far more coffee to water, so they extract faster and can go from balanced to bitter in seconds.

This is why brew methods have matched grind sizes. Espresso passes water through in under thirty seconds so needs a very fine grind. A French press steeps for four minutes and needs a coarse one. Using an espresso grind in a press is a reliable way to make something undrinkable.

Bitterness is not the enemy

Some bitterness is desirable. It gives coffee body and balance, and a cup with none tastes hollow and sour. The goal is proportion rather than elimination.

It is also worth noting that bitter sensitivity varies genetically between people. Some taste certain bitter compounds far more intensely than others, which is a real reason two people can disagree about the same cup without either being wrong.

Why coffee tastes different from the same beans

Two people using identical beans can produce very different cups, and the variables are more limited than they look. Water quality matters considerably, since coffee is over ninety eight percent water and very soft or very hard water both extract poorly.

Freshness matters too. Coffee releases carbon dioxide for days after roasting, and beans that are too fresh brew unevenly while beans months old have lost most of their aromatics. Grinding immediately before brewing makes a larger difference than most equipment upgrades, because ground coffee stales within minutes rather than weeks.
