What Is Emulsification in Cooking?

Emulsification is the trick that makes oil and water mix when they naturally refuse to. Mayonnaise, hollandaise, vinaigrette, butter and milk are all emulsions, and understanding how they hold together explains both how to make them and how to fix them when they break.
What it solves
Oil and water do not mix because their molecules interact very differently. Water molecules are polar and attract each other strongly, while oil molecules are not, so the two separate into layers to minimise contact.
An emulsion forces one liquid into tiny droplets suspended throughout the other. Shaking a vinaigrette does this temporarily, but the droplets soon find each other and merge back into layers. Making it last requires something extra.
The role of an emulsifier
An emulsifier is a molecule with a water loving end and a fat loving end. It sits at the boundary of each droplet with one end in the oil and the other in the water, forming a coating that stops droplets from merging.
The classic kitchen example is lecithin, found in egg yolk, which is why mayonnaise and hollandaise both start with yolks. Mustard contains emulsifying compounds too, which is the real reason it appears in so many vinaigrette recipes.
Emulsions you already use
Once you know the pattern you see them everywhere:

- •Vinaigrette, a temporary emulsion unless stabilised
- •Butter, water droplets suspended in fat, the reverse arrangement
- •Milk and cream, fat droplets in water stabilised by proteins

Why sauces split
An emulsion breaks when the droplets manage to merge. The usual causes are adding oil too fast so there is not enough emulsifier coating each new droplet, overheating which destabilises the proteins, or too much oil for the amount of emulsifier present.
Temperature shock does it as well. Hollandaise is particularly fragile because the egg proteins that stabilise it will also curdle if the sauce gets too hot, so it fails in two different ways at once.
How to fix a broken sauce
A split mayonnaise can usually be rescued. Start with a fresh egg yolk, or a teaspoon of water or mustard, in a clean bowl and whisk the broken mixture into it very slowly, a few drops at a time.
The principle is to rebuild the emulsion from a stable base rather than trying to repair the broken one. The same slow reintroduction works for hollandaise, often with a spoonful of warm water to help. Prevention is easier: add oil gradually and keep the temperature moderate.
Pasta water as an emulsifier
The advice to save a cup of pasta cooking water before draining is genuinely about emulsification rather than tradition. The water contains dissolved starch released by the pasta.
Starch acts as a stabiliser, helping fat and water combine into a glossy sauce that clings to the pasta instead of pooling at the bottom of the bowl. Adding a splash of the starchy water while tossing pasta with oil, butter or cheese is what turns separate ingredients into a coherent sauce, and it is the single most useful reason most restaurant pasta looks different from home versions.
